ABOUT THIS WINE
Planeta Passito di Noto is a sweet white wine from Sicily, produced by the Planeta winery under the Noto DOC appellation. The wine is made exclusively from Moscato Bianco grapes. Planeta, a family with a 17-generation history in Sicilian agriculture, owns six estates across the island, focusing on showcasing regional diversity. The grapes for this wine are sourced from the Buonivini vineyard in Noto, characterized by its limey soil with small stones. The production method involves drying the grapes for approximately 40 days to concentrate their sugars and flavors, a practice rooted in ancient traditions but executed with modern techniques.

WINE MAKING PROCESS
The winemaking process for Planeta Passito di Noto begins with harvesting Moscato Bianco grapes at the end of August. These grapes are then dried in a cellar for approximately 40 days, a technique known as 'passito', until they lose about half their weight. This concentration process intensifies the sugars and flavors. The resulting must undergoes a slow fermentation at 18°C for over a month in stainless steel vats. Following fermentation, the wine remains in stainless steel until bottling, a method chosen to preserve its aromatic freshness and fruit purity.
