ABOUT THIS WINE
Pazo de Monterrey Raúl Boo Godello is a premium single-parcel white wine produced by Bodega Pazos del Rey in the Monterrei DO of Galicia, Spain. Named to honor the former owner of the estate's historic vineyards, this boutique cuvée represents a qualitative shift for the winery, which was founded in 1965 as a cooperative before transitioning to limited-production, terroir-driven winemaking. Sourced from high-altitude vineyards situated between 600 and 800 meters in the Verín Valley, the wine reflects the unique microclimate of Monterrei—the only Galician region in the Duero basin—where Atlantic and continental influences meet on granite-clay and slate soils.

WINE MAKING PROCESS
The winemaking process for this limited-edition Godello focuses on texture and complexity. Grapes are hand-harvested in small 15 kg crates to ensure pristine quality. After gentle destemming and light pressing, alcoholic fermentation is carried out at low temperatures in 600-liter French oak barrels, primarily of third-use to prevent wood from overpowering the fruit. The wine is then aged on its fine lees for six months in these barrels, with regular bâtonnage (lees stirring) to build structural volume, creaminess, and aging potential before bottling.
