WINE MAKING PROCESS
The winemaking process for Pazo de San Mauro Albariño involves hand-harvesting with vineyard selection. Three distinct vinification methods are employed: cool temperature maceration to enhance aromas, whole-bunch vinification for freshness, and direct pressing after destemming to retain acidity. Alcoholic fermentation occurs in stainless steel tanks under controlled low temperatures. The wine then undergoes aging for 7-12 months in stainless steel tanks.
