WINE MAKING PROCESS
Pazzione Cava is produced using the Traditional Method, a process involving a second fermentation in the bottle to create its characteristic sparkle. The grapes, hand-picked from organically farmed vineyards in Catalonia, are Macabeo, Parellada, and Xarel·lo. Following the initial fermentation, the wine undergoes a minimum of 9 months of aging on its lees before disgorging. This aging period contributes to the wine's texture and complexity.
