WINE MAKING PROCESS
Tenuta Ulisse produces its Pecorino using advanced techniques designed to preserve the grape's natural characteristics. Grapes are harvested in mid-September and immediately chilled in a cooling tunnel. They undergo cold maceration on the skins before fermentation at low temperatures (8-11°C) in stainless steel tanks to maintain aromatic purity. The wine is then aged for about three months in stainless steel, followed by bottle aging before release.
