WINE MAKING PROCESS
The grapes are hand-harvested from the estate's historic, own-rooted Zinfandel blocks, which yield a meager two tons per acre. After gentle crushing, the fruit undergoes fermentation on the skins to complete dryness, followed by 100% malolactic fermentation. Depending on the specific bottling, the wine is aged for 12 to 24 months in a combination of French and American oak barrels, with approximately 15% new wood, to seamlessly integrate the oak influence while preserving the vibrant fruit character.
