ABOUT THIS WINE
Peller Estate Vidal Blanc Icewine 2019 is a dessert wine produced by Peller Estates Winery in the Niagara Peninsula, Ontario, Canada. It is made from 100% Vidal Blanc grapes, a hybrid varietal. The winery was founded by Andrew Peller with a long-standing commitment to quality winemaking in Canada. The Niagara Peninsula's climate is particularly suited for icewine production due to its proximity to Lake Ontario, which moderates temperatures and ensures the necessary cold conditions for grapes to freeze on the vine.

WINE MAKING PROCESS
The production of Peller Estate Vidal Blanc Icewine begins with the meticulous hand-harvesting of Vidal Blanc grapes during the coldest winter nights, when temperatures fall below -8°C to -10°C. This process naturally freezes the grapes on the vine, concentrating their sugars and flavors. The grapes are then pressed to extract a precious, intensely sweet juice. Fermentation takes place at low temperatures to preserve the purity of the fruit. Following fermentation, the wine is aged in stainless steel to maintain its vibrant fruit character.
