WINE MAKING PROCESS
The winemaking process for the Pendulum Red Blend begins with harvesting grapes at optimal phenolic ripeness. Upon arrival at the winery, the fruit is destemmed and undergoes a brief cold soak to extract color and primary fruit flavors. Fermentation takes place in temperature-controlled stainless steel tanks, utilizing regular punch-downs and pump-overs to manage tannin extraction and color stability. Following fermentation, the wine is aged for approximately 11 to 12 months in a combination of French and American oak barrels, which integrates the tannins and imparts subtle sweet spice and wood characteristics before final blending and bottling.
