WINE MAKING PROCESS
Pépin Crémant d'Alsace is produced using natural winemaking methods, with fermentation initiated by indigenous yeasts. The wine undergoes minimal or no added sulfites and is aged for at least 12 months on its lees ('sur lattes'), with some aging occurring in barrels. Filtration is avoided to preserve the wine's natural character. Grapes are hand-harvested to ensure quality. The winemaking is characterized by a commitment to organic viticulture and a philosophy of minimal intervention, aiming to reflect the purity of the fruit and the terroir.
