ABOUT THIS WINE
The Peratara Valpolicella Superiore 2019 from La Collina dei Ciliegi originates from the Valpantena sub-region in Veneto. The wine's name, 'Peratara,' refers to the stony soil of its high-altitude vineyard, situated between 550 and 570 meters above sea level. This location experiences significant diurnal temperature shifts, delaying grape ripening. La Collina dei Ciliegi, founded by Massimo Gianolli and Stefano Falla, emphasizes a philosophy of 'slow living, fast thinking,' focusing on terroir-precision winemaking and respecting natural cycles, with a commitment to organic practices.

WINE MAKING PROCESS
The Peratara Valpolicella Superiore 2019 begins with hand-harvested grapes that are destemmed and gently crushed. Fermentation takes place in stainless steel tanks at controlled temperatures of 22-24°C, with a 10-day maceration period involving daily délestage and pumping over. Following fermentation, the wine is aged for two years in a mix of large barrels, tonneaux, barriques, and amphorae. It then rests for a further year in bottle before release. La Collina dei Ciliegi is committed to sustainable and organic practices, guided by a philosophy of precision winemaking and respect for natural cycles.
