ABOUT THIS WINE
Winzerhof Hoch has a rich history in Hollenburg dating back to 1640. Originally operating as Danube river shippers, the family's viticultural roots run deep, now managed by the 12th generation. The 'Peter & Paul' project represents a bridge between generations and winemaking philosophies, named after the winery's patron saints whose 300-year-old statues stand at the entrance gate. 'Peter' represents clean, precise, classical methods, while 'Paul' represents natural, spontaneous, skin-contact methods. By blending these two pathways, this Pet Nat delivers a wine that is wildly textured yet remarkably clean, focused, and joyful.

WINE MAKING PROCESS
The grapes are 100% hand-harvested from the unique Hollenburg Conglomerate soils. They undergo 7 to 10 days of skin maceration to extract color, aroma, and delicate tannins. The wine is crafted using two distinct methods: one part is fermented on skins in stainless steel under reductive conditions to preserve fresh primary aromatics, while the other part undergoes spontaneous fermentation with ambient yeasts in large, neutral old oak casks without any sulfur additions. The active fermenting must is then bottled to complete fermentation in the bottle, trapping natural carbon dioxide. The wine is released un-disgorged, unfined, and unfiltered.
