ABOUT THIS WINE
The Pet Nat Vol 2 Fuchs & Hase 2023 is a white sparkling wine from Niederösterreich, Austria, produced by Weingut Fuchs & Hase. This collaborative project, founded by four friends, focuses exclusively on Petillant Naturel wines made with minimal intervention. The name 'Fuchs & Hase' (Fox & Hare) reflects the winery's location and philosophy. The grapes are sourced from high-elevation, cool-climate vineyard sites in the Kamptal and Kremstal areas, known for their loess and clay soils with calcareous inclusions. The wine is a blend primarily of Grüner Veltliner and Gelber Muskateller, with a portion of Gelber Muskateller skins added for texture and flavor. Farming is certified organic, and the winemaking emphasizes natural yeasts and minimal intervention, with very low or no added sulfur. The 'Volume' numbering system indicates the extent of skin contact used in its production.

WINE MAKING PROCESS
The Pet Nat Vol 2 Fuchs & Hase 2023 is produced using the Méthode Ancestrale, where the wine is bottled while still undergoing its primary fermentation, capturing natural carbonation. Fermentation is initiated with native yeasts. The grapes, a blend of Grüner Veltliner and Gelber Muskateller, may undergo co-fermentation on the skins for a period. Specifically, Gelber Muskateller skins are added post-pressing for approximately seven days to enhance fruit and complexity. The wine is then aged in bottle. It is intentionally left unfined and unfiltered, and minimal to no sulfur is added throughout the process. The winemaking is guided by a philosophy of sustainability and minimal intervention, with certified organic farming practices employed in the vineyards.
