ABOUT THIS WINE
The Peter & Paul Pet Nat from Hoch Harald e.U. is a naturally sparkling white wine from the Kremstal region of Lower Austria. The wine is named in honor of the patron saints of the Winzerhof Hoch vineyard, a tradition dating back to the mid-17th century. The estate, led by Harald and Andrea Hoch, is a multi-generational family winery committed to organic viticulture. Their vineyards are characterized by chalky soils and conglomerate rock, specifically the unique Hollenburg Conglomerate formation, which influences the wine's character. The 'Peter & Paul' wines are conceived as a generational collaboration, symbolizing the union of family, tradition, and a shared winemaking philosophy.

WINE MAKING PROCESS
The Peter & Paul Pet Nat is produced using the Pétillant Naturel (Pet Nat) method, also known as the ancestral method. This involves bottling unfermented grape must that still contains residual sugar. The fermentation process then continues inside the bottle, creating natural carbonation and pressure. The wine is typically unfiltered, resulting in a natural cloudiness from yeast lees. For some of the producer's Pet Nat wines, a portion is fermented spontaneously in wooden barrels and aged oxidatively without sulfurization. The producer practices organic viticulture across their vineyards.
