WINE MAKING PROCESS
Petillant de Gabriel Brut is produced using the Charmat method, also known as the tank method. The grapes, Ugni Blanc and Colombard, are first pressed and fermented into a dry still base wine. The secondary fermentation, which creates the wine's effervescence, takes place in pressurized tanks. Following this, the wine undergoes a three-month aging period on its lees to enhance complexity. The grapes are harvested in late September. Vignobles Gabriel & CO emphasizes sustainable viticulture, with their vineyards certified for organic and fair trade practices. The winery also implements environmental considerations in its packaging, such as using lightweight bottles.
