ABOUT THIS WINE
The François Chidaine Pétillant 2019 is a sparkling white wine crafted from 100% Chenin Blanc grapes. It originates from the Loire Valley, with grapes sourced from Vouvray vineyards, though the wine is classified as Vin de France. François Chidaine, the producer, is recognized for his long-standing commitment to organic and biodynamic farming practices, which he has implemented on his estate since the 1990s. This wine is produced using the méthode ancestrale, where the secondary fermentation occurs in the bottle, and it is bottled without dosage. The estate's vineyards are situated on clay-limestone soils.

WINE MAKING PROCESS
The François Chidaine Pétillant 2019 is produced using 100% Chenin Blanc grapes. The winemaking process begins with spontaneous fermentation on indigenous yeasts in 620-liter demi-muids, where the wine rests for six months. Malolactic fermentation is not pursued. For its sparkling character, the wine is bottled with approximately 14-16 g/L of sugar, initiating a secondary fermentation in the bottle, known as the méthode ancestrale. It then undergoes aging on lees for at least 12 months before being disgorged. The grapes are sourced from vines aged between 10 and 50 years, grown on clay-limestone soils. The estate has adhered to organic farming since 1992 and is certified biodynamic since 1999.
