WINE MAKING PROCESS
The Birichino Pétillant Malvasia Bianca 2022 undergoes a meticulous winemaking process. The grapes are fermented with extended skin contact for 33 days, followed by spontaneous fermentation. The wine is then bottle-conditioned with fine lees. A small addition of sweet Malvasia juice at bottling initiates a secondary fermentation, creating the effervescence. Following this, the wine is aged for 14 months in neutral puncheons. The vineyards are organically farmed.
