WINE MAKING PROCESS
Petit Chablis Domaine Sainte Claire J M Brocard is produced from Chardonnay grapes. The winemaking process involves fermentation in stainless steel tanks at controlled temperatures, typically around 18-20 degrees Celsius. Following fermentation, the wine undergoes a period of aging on its lees until bottling. This technique, known as 'sur lie' aging, aims to enhance texture and complexity without the use of oak. The J.M. Brocard estate is known for its commitment to ecological viticulture, with some of its vineyards managed according to biodynamic principles, avoiding synthetic fertilizers and pesticides.
