The vineyards are situated on higher slopes with Portlandian limestone soils, distinct from other Chablis terroirs. The 2023 vintage benefited from a climate that preserved acidity while developing sugars.

WINE MAKING PROCESS
The winemaking process for Petit Chablis Ropiteau Frères begins with a long pressing of the Chardonnay grapes. Fermentation occurs in stainless steel tanks at controlled temperatures of approximately 18°C to maintain fruit freshness. Malolactic fermentation is initiated approximately ten days after alcoholic fermentation to enhance suppleness. The wine then undergoes aging on partial lees for four to five months. This approach focuses on preserving the wine's inherent fruitiness and minerality.
