WINE MAKING PROCESS
The winemaking process for this Petit Chablis begins with hand-harvested Chardonnay grapes. Fermentation occurs in small stainless steel vats, utilizing gravity to avoid pumping and employing brief pneumatic pressing. Static settling of the juice preserves fine lees for natural fermentation. Following fermentation, the wine is aged for 8 to 10 months in stainless steel vats to maintain its freshness. The Domaine William Fèvre estate practices reasoned agriculture, with over half of its vineyards being organically grown.
