WINE MAKING PROCESS
The Pfitscher Pinot Nero Fuxleiten 2021 is produced from 100% Pinot Noir grapes. Following manual harvesting, fermentation takes place over 10-14 days in stainless steel tanks with continuous agitation of the marc head at controlled temperatures; some indications suggest a split fermentation between stainless steel and oak barrels. The wine then undergoes aging for 18 months on its lees, with aging occurring in both oak and steel vessels, or specifically in oak barrels for 12-15 months according to some sources. Further bottle aging is also part of the process. The winery employs sustainable viticulture practices, focusing on low yields and environmental respect.
