WINE MAKING PROCESS
The Aphros Phaunus PET NAT White 2023 is produced using the ancestral method, where fermentation is completed in the bottle to create natural carbonation. The grapes are fermented in granite tanks at temperatures between 19-22ºC. Following primary fermentation, the wine undergoes a secondary fermentation in the bottle for approximately three months before disgorging. The grapes are hand-harvested, and the producer, Adega Aphros Wine, adheres to biodynamic farming practices. The vineyards are situated on granite soil.
