ABOUT THIS WINE
The Phoenix Ferment Garage Wine is a unique white wine crafted from 85% País and 15% Cariñena grapes, originating from the Secano Interior Cauquenes in Chile's Maule region. The wine's genesis traces back to the 2017 fires, where grapes were pressed immediately to prevent smoke taint, leading to its unexpected white wine vinification. This practice, inspired by the need for a 'rebirth from the ashes,' has been maintained. The grapes are sourced from ancient vines, over 150 years old, grown in granitic soils within the Coastal Range. Garage Wine Co., the producer, is committed to reviving old vineyards and supporting traditional farming methods in Maule, Chile.

WINE MAKING PROCESS
The Phoenix Ferment Garage Wine is produced using grapes from vines over 150 years old. Harvested fruit undergoes whole bunch pressing. Fermentation is carried out with native yeasts in stainless steel tanks. Following fermentation, the wine is aged on its lees for eight weeks with weekly stirring. It then spends a winter aging in older barrels. The producer, Garage Wine Co., emphasizes traditional and sustainable farming practices, including dry-farming and the use of horses for vineyard work, aiming to preserve old vines and produce authentic wines.
