WINE MAKING PROCESS
The Mersel Phoenix Field Blend 2022 is produced using organic farming practices. The grapes are destemmed and fermented on skins for four weeks in stainless steel tanks with indigenous yeasts. After fermentation, the wine is transferred to stainless steel tanks for aging. Natural cold stabilization is utilized due to the winery's ambient temperatures. The winemaking process is characterized by minimal intervention, with the wine being unfined and unfiltered. The Merwah grapes are sourced from vines over 150 years old, grown at an altitude of 1,600 meters.
