ABOUT THIS WINE
Massimo Coletti is a dedicated biodynamic producer located in the Treviso hills of Veneto, committed to reviving traditional, pre-industrial winemaking methods. 'Phoja' (meaning 'leaf' in the local Venetian dialect) is a Col Fondo Prosecco, meaning it undergoes secondary fermentation in the bottle and is left unfiltered on its lees. This artisanal approach stands in stark contrast to mass-produced tank-method Proseccos, offering a cloudy, yeasty, and incredibly vibrant expression of the Glera grape from old vines grown on clay-limestone soils.

WINE MAKING PROCESS
The Glera grapes are hand-harvested and gently pressed. Primary fermentation occurs spontaneously with native yeasts in stainless steel tanks. The wine is bottled in the spring following the harvest with a small amount of residual sugar, allowing secondary fermentation to occur naturally in the bottle (ancestral method). It is not disgorged, leaving the sediment (lees) in the bottle, and is sealed with a crown cap. Minimal sulfur is added only at pressing.
