WINE MAKING PROCESS
Domaine Haut-Lirou employs traditional winemaking techniques. Grapes are destemmed, and some are crushed while others undergo semi-carbonic maceration. Fermentation takes place in concrete vats with natural yeasts, utilizing pumping over and punching down for extraction at controlled temperatures. Maceration can last from two to four weeks. The wine is then aged for approximately 12 months, either in large wooden casks (foudres), stainless steel vats with a portion in French oak barrels, or entirely in French oak barrels, followed by time in stainless steel tanks. Viticultural practices include short pruning, soil aeration, leaf thinning, and the use of natural manure, with some cuvées being organically farmed.
