WINE MAKING PROCESS
The Pierre qui Rolle 2022 is produced using hand-harvested Rolle and Grenache Blanc grapes. The grapes undergo maceration on their skins for 7-10 days in stainless steel tanks before pressing. Fermentation is spontaneous, utilizing indigenous yeasts in stainless steel tanks. Following fermentation, the wine is aged for 10 months in used French oak barriques. The winemaking process emphasizes minimal intervention, with the wine bottled without fining or filtration and with minimal sulfur addition only when necessary.
