WINE MAKING PROCESS
The Pietradolce Contrada Santo Spirito 2017 undergoes alcoholic fermentation in concrete tanks for about 8 days, followed by malolactic fermentation. The wine is then aged for 14 months in 700-liter French oak tonneaux, predominantly used barrels. A further 3 months of aging occurs in bottle before release. The grapes are harvested in the latter half of October. Pietradolce employs organic farming and eco-sustainable practices in its vineyards.
