WINE MAKING PROCESS
The winemaking process begins with gentle pressing of the Pinot Grigio grapes. The resulting must undergoes fermentation in stainless steel tanks at controlled temperatures between 14-15°C for 8-10 days. Following fermentation, the wine is aged for 4 months in stainless steel tanks, with a further 2 months of bottle aging before release. The harvest for the 2023 vintage involved manual selection of grapes in the vineyard during early September, with vineyard management adapted to the year's weather patterns.
