WINE MAKING PROCESS
The production of Pinot Noir Biologist involves biodynamic viticulture, with grapes handpicked from vineyards near Kyiv and in the Odesa region. The winemaking process utilizes natural fermentation with wild yeasts for 50% of the must. Cold maceration with stems lasts for 10 days, followed by a gravity-led process and extended maceration. The wine is aged for 5-9 months in 225L oak barrels, where malolactic fermentation also occurs. Finally, the wine is bottled unfiltered.
