WINE MAKING PROCESS
The Heidi Schröck & Söhne Pinot Pét-Nat is produced using the ancestral Pétillant Naturel method. Grapes are hand-harvested with no added sulfur dioxide. The wine is skin-fermented for three days with native yeasts in stainless steel tanks, followed by maturation in a large, used oak cask. This approach emphasizes minimal intervention, allowing the natural characteristics of the Pinot Blanc and Pinot Gris grapes, grown under organic farming practices in the Rust region, to define the wine.
