WINE MAKING PROCESS
The David & Nadia Pinotage 2022 is produced using 100% Pinotage grapes. Approximately 20% whole bunches are included in the fermentation process, which occurs in concrete tanks and a vertical wooden foudre. Extraction is managed gently with one punch down per day. Following fermentation, the wine is aged for 18 months in a combination of concrete, neutral 500-liter barrels, and a large vertical foudre. The vineyard practices are organic and biological, focusing on dry-land farmed bush vines planted between 1991 and 1998, located on the Paardeberg at around 240 meters altitude in granitic soils.
