ABOUT THIS WINE
The Pita Pet-Nat 2022 is a natural sparkling white wine produced by António Lopes Ribeiro Wines Lda. at Casa de Mouraz in the Dão region of Portugal. It is made using the ancestral method, a single fermentation process where the wine is bottled before primary fermentation is complete, allowing secondary fermentation and carbonation to occur in the bottle. The wine is primarily composed of 90% Arinto, complemented by other indigenous Portuguese grape varieties. The estate is committed to organic and biodynamic viticulture, with vineyards situated at high altitudes on granite and clay soils. The wine is unfined and unfiltered with low sulfur additions. The name 'Pita' is inspired by a chicken that assists around the vineyard, embodying the estate's connection to nature and its farming philosophy.

WINE MAKING PROCESS
The Pita Pet-Nat 2022 is produced using the ancestral method, also known as Petillant Naturel. This involves a single fermentation process where the wine is bottled before the primary fermentation is complete. The fermentation takes place in stainless steel vats. Secondary fermentation and carbonation occur naturally within the bottle, creating the wine's sparkle. The wine is intentionally left unfined and unfiltered, and is made with low levels of sulfur. Grapes are hand-harvested, typically in early September. The winemaking philosophy emphasizes minimal intervention to allow the natural expression of the indigenous grape varieties and the Dão terroir.
