WINE MAKING PROCESS
The Planeta Plumbago Nero d'Avola 2021 is produced from hand-harvested grapes sourced from estate vineyards in Menfi and Sambuca di Sicilia. The grapes are fermented in stainless steel tanks at a maximum temperature of 24-25°C for 8 days, with maceration on the skins lasting 10-12 days. Following fermentation, the wine undergoes aging for 10 months in French oak barrels of third and fourth passage. Vineyards are managed using espalier, spurred cordon, and unilateral Guyot training systems, with planting densities ranging from 3,800 to 5,000 vines per hectare. Yields are maintained at approximately 70-80 quintals per hectare.
