Plegma Red 2020 by Olympus Wineries is a single-varietal wine made from 100% Mavro grapes. The grapes are sourced from old vines, over 60 years in age, cultivated at an altitude of 900 meters in Omodos, Cyprus. Olympus Wineries is part of ETKO Ltd., one of the oldest wine producers in Cyprus, established in 1844. The Plegma project is a premium initiative by Olympus Winery focused on utilizing and elevating indigenous Cypriot grape varieties, aiming to create wines with a distinct identity.

WINE MAKING PROCESS
Plegma Red 2020 undergoes a winemaking process that begins with a four-day cold maceration. Fermentation starts at 16°C and progresses to 22°C, with regular délastages to enhance polyphenol and aroma extraction. Following fermentation, the wine is aged on lees for four months in stainless steel tanks. The grapes are cultivated using traditional methods with a focus on low crop yields.
