WINE MAKING PROCESS
The winemaking process for Poema Alvarinho Novellis begins with hand-harvested grapes from Quinta do Louridal's own vineyards. The grapes undergo gentle pressing at low temperatures to protect their aromas. Fermentation is carried out using local yeasts in vessels ranging from 1500 to 3000 liters, maintained at 14-16°C for six weeks. Following fermentation, the wine is aged on its lees for six months, with periodic battonage to enhance texture and complexity, all within controlled temperatures. The wine is then aged for a minimum of six months in bottle before its release.
