WINE MAKING PROCESS
The 2022 Poggio Anima 'Belial' Sangiovese is produced using 100% Sangiovese grapes from a single vineyard. The grapes are hand-harvested and undergo fermentation with native yeasts using 100% whole berries in temperature-controlled stainless steel tanks. Skin contact is maintained for 7-10 days to achieve color extraction without excessive tannin. Both alcoholic and malolactic fermentations occur in stainless steel. The wine is then aged for 12-18 months in stainless steel tanks, emphasizing minimal oak influence. It is filtered but unfined.
