WINE MAKING PROCESS
Pol Roger Rich Demi-Sec is a non-vintage Champagne produced using a blend of approximately equal parts Chardonnay, Pinot Noir, and Pinot Meunier. The base wines are fermented separately in stainless steel tanks at cool temperatures and all undergo malolactic fermentation. After blending, the wine undergoes its secondary fermentation and aging in Pol Roger's cellars, located 33 meters below street level. It is aged on lees for a minimum of 4 years, typically 5-6 years, before disgorgement. The dosage is adjusted to achieve the demi-sec sweetness level, with residual sugar typically around 34 g/l.
