Polaris Muscadet Sèvre et Maine sur lie

The winemaking process for Polaris Muscadet Sèvre et Maine sur lie involves hand-harvesting grapes from vineyards with diverse soil types. Fermentation takes place in underground cement vats using indigenous yeasts, typically lasting between two weeks and one month. Following fermentation, the wine is aged on its lees ('sur lie') for periods ranging from 7 to 18 months, depending on the specific parcel. This aging is conducted in inert vessels such as underground glass-lined tanks and cement vats. The estate adheres to organic farming principles and has been committed to this approach since 1995.
