WINE MAKING PROCESS
The 2018 Ponzi Pinot Gris is produced from grapes sourced from LIVE Certified Sustainable vineyards, including Ponzi's own Aurora, Avellana, and Estate Vineyards, as well as select partner vineyards. Viticulture emphasizes organic and regenerative methods. The grapes are fermented in temperature-controlled stainless-steel tanks at temperatures not exceeding 55°F. Malolactic fermentation is prohibited to retain the wine's bright character. The winery generally practices gentle cellar handling and minimal intervention.
