WINE MAKING PROCESS
The 2021 Porkoláb Kadarka is produced using 100% Kadarka grapes from the Porkoláb Valley vineyard, planted with specific Kadarka clones. The winemaking process emphasizes freshness and aromatics. Harvest involved multiple passes to select optimal fruit, and whole clusters were utilized. Fermentation is spontaneous, occurring in open vats with minimal extraction achieved through manual wine movement. Maceration lasted 13 days. Following fermentation, the wine was aged for 8 months in unlined clay vessels (amphorae). Heimann & Fiai is actively transitioning to organic farming practices.
