WINE MAKING PROCESS
The Portal White Celler Piñol 2022 is produced from hand-harvested grapes from high-elevation vineyards. After gentle pressing and destemming, the grapes undergo a low-temperature skin-contact maceration for approximately 8 hours to maximize flavor extraction. Fermentation occurs in stainless steel tanks using yeast from Levuline in Champagne, with virgin must fermented at controlled temperatures. The wine is then aged for two months in stainless steel tanks on its lees. No malolactic fermentation is performed.
