ABOUT THIS WINE
The Portillo Organic Malbec 2021 is a 100% Malbec from Bodegas Salentein, situated in Argentina's Uco Valley. Founded in 1996 by Myndert Pon, Bodegas Salentein aimed to elevate the Uco Valley's wine reputation. The winery's high-altitude vineyards, between 1,050 and 1,700 meters, benefit from significant diurnal temperature shifts, contributing to grape quality. The 'Portillo' name references a mountain pass, reflecting the winery's Andean location. This wine is organically cultivated, highlighting the producer's focus on sustainability and natural winemaking practices.

WINE MAKING PROCESS
The winemaking process for Portillo Organic Malbec begins with hand-harvested grapes. After destemming, the grapes are subjected to cold maceration, followed by fermentation in stainless steel tanks for 10-15 days. During fermentation, remontage is performed thrice daily, followed by post-fermentation maceration. The wine then undergoes malolactic fermentation and is aged in tanks until bottling. This method focuses on preserving the natural fruit characteristics of the Malbec grape.
