WINE MAKING PROCESS
The winemaking process for Domaine Cordier Pouilly-Fuissé Vieilles Vignes begins with the gentle pressing of whole grapes, with the juice transferred to barrels via gravity. Natural fermentation is employed, allowing indigenous yeasts to work. The wine is aged for 12 months in 350-litre barrels and then for 6 months in stainless steel tanks or oak foudres, resting on its original lees. Bottling is conducted with minimal intervention, using very light filtration and gravity bottling. Vineyard practices include Guyot pruning and severe disbudding, with a strong emphasis on organic and biodynamic farming.
