WINE MAKING PROCESS
The winemaking process for De Bernard Brut Millesimato begins with a "vinification in bianco," meaning the grapes are pressed and fermented without skin contact, at a carefully controlled temperature of 20°C. The crucial secondary fermentation, known as "presa di spuma," takes place slowly in large, closed stainless steel tanks (Charmat method) at a cool 12-14°C. Following this, the wine rests on its lees for approximately two months, a period that enhances its complexity, texture, and contributes to the fine and persistent mousse. The wine is bottled with a pressure of 5.5 atmospheres, ensuring its vibrant effervescence.
