ABOUT THIS WINE
Celler de les Aus is the natural wine project of the Pujol-Busquets family, creators of the Alta Alella estate. Located just north of Barcelona, the winery is dedicated to producing organic, natural wines with zero added sulfites. The name 'Puput' refers to the Hoopoe bird, reflecting the estate's commitment to biodiversity and ecological balance. This rosé pét-nat is crafted from Pansa Rosada (Xarel·lo Vermell), a rare local pink-skinned mutation of Xarel·lo, grown on 'sauló' soils (decomposed granite) overlooking the Mediterranean Sea.

WINE MAKING PROCESS
Produced using the ancestral method (pétillant naturel). The Pansa Rosada grapes are hand-harvested and gently pressed. Fermentation begins spontaneously with indigenous yeasts in stainless steel tanks at controlled temperatures. Before fermentation is complete, the wine is bottled without any additions, fining, filtration, or added sulfur dioxide. The fermentation finishes inside the bottle, trapping the natural carbon dioxide to create a delicate, lively sparkle.
