WINE MAKING PROCESS
The winemaking process at Pyramid Valley Vineyards is characterized by a natural and minimal intervention approach. Grapes are fermented exclusively with natural yeasts, and natural malolactic fermentation is employed. Additions are kept to a minimum, with little or no sulfur used. The wine undergoes natural settling and is not fined. Some bottlings are unfined and unfiltered. Aging takes place in French oak for 18 months, with a portion of new French barriques used in some cuvées. Grapes are tread by foot and fermented in small clay vessels.
