ABOUT THIS WINE
Questo Non É is a still white wine from Veneto, Italy, produced by Monban under Matteo Bisol. The wine is made from 100% Glera grapes, a departure from the region's dominant sparkling Prosecco production. Its name, meaning 'This is not,' reflects its rejection by the Prosecco tasting commission, a fact embraced by the producer as a symbol of its unique character. Matteo Bisol, from a long-standing winemaking family, established Monban to create wines with minimal intervention, aiming to capture the essence of traditional winemaking while adhering to natural principles. The estate is situated in the Colli Trevigiani IGT, within the Prosecco hills, on clay-rich soils that contribute to the wine's structure. The wine is often presented as a Non-Vintage (NV) cuvée.

WINE MAKING PROCESS
Questo Non É is crafted using minimal intervention techniques. The grapes undergo spontaneous fermentation with indigenous yeasts, followed by malolactic conversion. The wine is aged on its lees in concrete vats until the spring after harvest. It is then bottled unfiltered and unfined, with a low addition of sulfites. The viticulture is strictly organic with biodynamic influences, and efforts are made to enhance biodiversity on the estate. The winemaking approach prioritizes authenticity and the expression of the Glera grape in a still wine format.
