WINE MAKING PROCESS
The winemaking process for Quinta de Chocapalha Cabernet Sauvignon begins with destemming the grapes, followed by a 12-hour pre-fermentation maceration in open vats. Fermentation occurs over 11 days in stainless steel tanks, with temperatures maintained below 26°C. A post-fermentation maceration with the skins is utilized to enhance color and aroma extraction. The wine then undergoes a 12-month aging period in French oak barrels, with 40% new oak, during which malolactic fermentation also takes place.
