WINE MAKING PROCESS
The winemaking process at Quinta do Pessegueiro combines modern and traditional techniques. Grapes undergo a 12-hour pre-maceration in a refrigerated chamber before destemming and gentle crushing. Alcoholic fermentation occurs slowly and under controlled conditions in wooden vats. Malolactic fermentation takes place naturally in stainless steel tanks. The winery utilizes a gravity-fed system to minimize handling and preserve grape integrity. Following fermentation, the wine is aged in French oak barrels to develop its structure and complexity.
