WINE MAKING PROCESS
The production of Quinta dos Carvalhais Encruzado White involves a careful selection of 100% Encruzado grapes from the Dão region. A significant portion of the wine undergoes fermentation in French oak barrels of varying sizes, contributing to its structure and aromatic complexity. The remaining portion ferments in stainless steel tanks to preserve freshness. Following fermentation, the wine is aged for six months in French oak barrels. During this aging period, the fine lees are frequently stirred (bâtonnage), a technique that enhances the wine's mouthfeel, adds subtle wood-derived aromas, and contributes to its overall texture. This combination of fermentation and aging techniques aims to create a balanced and expressive white wine.
